Ingredients
- 2 chillies
- Zest and juice of 2 lemons
- 6 garlic cloves
- 1 bunch coriander
- 2 Tbsp olive oil
- Salt and pepper
- 1 x no 15 chicken, cut into 8 pieces
It's
worth
waiting
overnight
for this
spicy
chicken
dish!

Pound
chillies,
lemon zest,
lemon juice,
garlic, and
coriander
leaves and
roots.
Stir in the
oil and
season with
salt and
pepper. Rub
the marinade
over the
chicken
pieces and
leave them
to marinate
overnight,
if possible,
or for at
least 1-2
hours.

Brown
chicken
pieces on a
hot grill
and finish
cooking over
a medium
heat. To
test the
chicken,
pierce the
pieces with
a fork. If
it is cooked
the juices
should run
clear.
Cook’s
tips: to
make cooking
times easier
to judge,
always
select meat
of the same
thickness.
